This discrepancy in the timestamp of the logs has been logged as CR PLAT-27778 and can be referenced here: PLAT-27778 : PowerCenter 10.4.1 most recent domain and service logs are not rendering through admin console missing hours/days of entries compared to what is retrieved through infacmd GetLog command when server and client timezone differ. .
This will be fixed in a future release.
In the meantime, as a workaround, you can use the infacmd isp getlog command to get the accurate logs from the server to troubleshoot your issues: GetLog

Thank you for your message. I am able to use GetLog to fetch the logs at the Linux server level.
However, I am curious to know, exactly what version is this rectified?

A fix version hasn't yet been assigned to this CR. Once a fix version is assigned, you will be able to view the same from the following link: PLAT-27778 : PowerCenter 10.4.1 most recent domain and service logs are not rendering through admin console missing hours/days of entries compared to what is retrieved through infacmd GetLog command when server and client timezone differ.
Does your colleague also have the same configuration as you i.e the client is one hour behind the server timestamp?
